Tilapia fillets with raspberry vinegar recipe

Raspberry tilapia might sound like a strange mixture between dinner and desert, but combining tilapia with raspberry vinegar, honey and mustard will actually give you a delicious dish that can impress anyone. If you feel really adventurous, you can substitute the raspberry vinegar for other forms of fruit or berry vinegar and have a new experience each time. Why not try vinegar made from black currant, tomato, persimmon, quince, wolfberry or jujube? 


  • Butter or oil for greasing
  • 4 (4 ounce) fillets tilapia
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/4 cup raspberry vinegar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon dried dill weed


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a baking dish with butter or oil.
  3. Whisk together olive oil, honey, raspberry vinegar, yellow mustard and dill weed in a bowl.
  4. Place the tilapia fillets in a single layer in the greased baking dish.
  5. Pour the vinegar mixture over the fillets and make sure that they become evenly coated.
  6. Do not cover the baking dish. Bake in the preheated oven until the tilapia can be easily flaked using a fork. This will normally take around 20 minutes.
