Tilapia fillets with raspberry vinegar recipe
Raspberry tilapia might sound like a strange mixture between dinner and desert, but combining tilapia with raspberry vinegar, honey and mustard will actually give you a delicious dish that can impress anyone. If you feel really adventurous, you can substitute the raspberry vinegar for other forms of fruit or berry vinegar and have a new experience each time. Why not try vinegar made from black currant, tomato, persimmon, quince, wolfberry or jujube?
INGREDIENTS
- Butter or oil for greasing
- 4 (4 ounce) fillets tilapia
- 1/4 cup olive oil
- 1/4 cup honey
- 1/4 cup raspberry vinegar
- 1 teaspoon yellow mustard
- 1/2 teaspoon dried dill weed
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a baking dish with butter or oil.
- Whisk together olive oil, honey, raspberry vinegar, yellow mustard and dill weed in a bowl.
- Place the tilapia fillets in a single layer in the greased baking dish.
- Pour the vinegar mixture over the fillets and make sure that they become evenly coated.
- Do not cover the baking dish. Bake in the preheated oven until the tilapia can be easily flaked using a fork. This will normally take around 20 minutes.
