help with cycling

Help please, I am new at this. I have three large gold fish. I am moving them from a 30 gal. tank to a 55 gal. tank. It is a used tank, I am in the process of cleaning and resealing it. Could someone please explain cycling to me and how to do this with the larger tank before I add my fish, I really don't want to kill them! Would it help if I took a dirty filter out of their water filter in the 30 gal. tank and dropped it in the new tank while it is cycling? Thank you
