Biggest of the tiger and zebra nerites i have seen in my LFS were a little smaller than a quarter. They were monsters for their kind i think though... Mine are only maybe penny or nickel-sized like nick said.

5 per side would be good. Do you have live plants? Bettas love java moss.
I hate hearing people say "it's only a $3/$5/$1 fish/shrimp, so it's ok if it dies, I can just get another." It's still an animal! All animals should be treated like they're worth $10,000.

This is a pretty great idea, but I think you could keep more than 5 especially if you have java moss. It'll grow out of control and if your bettas arent that into shrimp for lunch, then youll soon have tons of RCS as they breed often.

Shrimp have very low bioloads. The cherries in fact i think are able to be kept 4 per gallon i read somewhere, so that shows how small the load is.

I think 12 small shrimp equals a 1" fish in terms of bioload. I'm not quite sure though.

Depending on filtration, which if I remember correctly, you have enough, you could keep a couple of shrimp per gallon. Some people are really strict about assigning bioloads to gallonages, some arent, I tend not to be.
