Could ask what pH they keep the water at, and the kh. Could ask how old the fish are, if you plan to raise and breed them knowing their age would help a fair bit. For sure you can ask what they are being fed, pellets or flakes, or live foods. If you plan on getting different types, may want to find out if they will work out in the same tank. Sometimes the breeder will know who their particular strain came from or even the collecting location. Some fish with the same identical name, can have different coloring or even shape, depending on which water system they are found in. If you decide to sell or breed them later, knowing this could be helpful.

Folks in the hobby are usually free with their knowledge, I doubt the person will have any problems answering your questions. When I first started with discus I went to look and pick them up, figured I'd only be there an hour at most, ended up spending almost the whole afternoon there, just asking questions and looking at the fishroom.
