Winter vs aquariums
The tank must be in a room with poor insulation. It feels quite cool at nighttime when I feed the fish. The heater is set for 81. Mainly because in the summer I couldn't get it lower. So yesterday morning the temp was 82 which is typical. Last afternoon it went down to 81 and last night it was 80. Now it's 80.8. Is this big temperature swiching thing a problem? Is the heater doing okay, because it's set for 81 and it's below that. anyone else had problems with tanks due to winter?

That is not a big temperature fluctuation. If you are going from 74 to 82 I would be more inclined to worry.

That's a slight fluctuation over the course of a day, nothing to be concerned about. Cooler air is typically going to mean that the heater has to work a bit harder to maintain the set temp and, with winter, you can expect evaporation to go up as well.

Oh yeah, lots of water has evaporated. i have to top off the tank water once or twice a week. And when I say top off, I mean a gallon top off once or twice per week.

Two gallon top-up isn't all that bad for you 80 gallon tank.
Do you have a top on your tank ?If you take your time to do the research FIRST, you can successfully set-up and keep ANY type of aquarium with ease.
