The gH raise from what is in the tap is indicative that you have something in the tank that is increasing it. I know that sounds like a "duh no kidding" answer, but that's all I've got for you. What kind of substrate and ornaments/decor in the tanks in question?
8 tanks running now:
1x 220 gallon, 2x55 gallon, 1x40 gallon long, 1x29 gallon, 1x20 gallon long, 1x5.5 gallon, 1x2 gallon
Gouramis, barbs, rasboras, plecos, corys, tetras, fancy guppies, swordtails, ottos, rainbow shark, upside-down catfish, snails, and Max and Sparkles the bettas.

GH is not a reading you need to be concerned about. It really has no bearing on a non planted tank. As for the 1.0 NO2 in your 30, that's somewhat to be expected, that tank is somewhat overstocked.

the only thing I can think of would be slate, but I've seen alot of people using it for caves. would that be harmful?

Pure slate should have no effect on your tank at all.

Right, GH is nothing to be concerned with.
The NO2 is in his 55, which he has listed as still cycling.
Agreed though with the 30 gallon being overstocked.8 tanks running now:

That's what I was wonder I didn't know if the hardness should concern me, but the slate is the only thing that I have recently put in there. As for my 30 gal, I was actually thinking about getting a couple more fish for it. But if it seems over stocked, I guess I better not, at least until I can double up the filters.

More filtration wont fix an overstock problem, just and under-filtration problem. I also wouldnt add any more fish to that tank.

I have to agree, but I'd still like more.

What would over filtration help? My water is clean, and levels aren't to high.

Lets just say it never hurts and theres no such thing as over-filtration.
