I suspect the handfuls of gravel plus bacterial supplement in the beginning was enough to deal with initial fish transfer. Two 25% water changes a week plus the anubias may be enough to keep everything at 0ppm. One question though, do you have the API nitrate test? You really have to shake bottle #2 for 30 seconds and then the test tube for 1 minute for it to register properly. Even a little bit of orange shows an accumulation of nitrate. I wouldn't expect there to be much, your water changes keep that low and anubias uses nitrate as fertilizer (but slowly). But I think the would be some nitrate eventually as for tank matures (mulm accumulation), it just might take a while as mentioned.

Better than having ammonia that just won't process!

I replace rather than clean the filter cartridges, but I don't touch the bio-wheel. I do have the API nitrate test. I took the test again making sure to shake the bottle and test tube for thirty seconds and one minute, and it still read 0ppm.
The gourami is really sick right now. I just walked past the tank and he was stuck to the filter! When I turned the filter off, he tried to swim, but he could not swim straight. He kept on doing backflips. His swimming looks like he has swim bladder disease. He then sank to the bottom of the tank and is just sitting there. I am worried that he is going die today or tomorrow.

The gourami died. We don't have clove oil, but if my otos start acting lethargic, I'll probably buy some. :( Thanks to everyone who responded!
