Is there a guide to substrate, or like a source where I could read about which fish prefer which sort of substrate? Thanks!

If you look at the catch location for wild versions of the fish, you will find the biotopes for their area.

I would never have thought that either. at first I was thinking that it would all just float away but then read the article I can see how it would work.

Yeah, apparently it remains quite buoyant for a while. It would have to be mixed with soil or something heavy and compact. And take care not to bother the substrate. But I like the high Cation-Exchange Capacity (CEC) which I consider letting the tank take care of itself.
