Anyone got any great beginner fish recommendations for freshwater?

Zebra danios (not giant danios) are hardy small fish and great for beginners. You don't have to worry about babies popping suddenly out like with swordtails, guppies, and plates.

Yep, zebras were my first thought too.
Fishpro, it would help us if you told us a bit about what you have in mind, especially what size of tank you have. That can drastically affect recommendations.

It would help to know the ph, gh, and kh of your source water, as well.

Zebra danios as already mentioned, as well as their two more popular variants: Leopard danios and red danios. Otherwise betta of course are hardy, along with gambusia.

Here's a good list, depending on tank size and water conditions that were already mentioned: https://modestfish.com/best-freshwat...for-beginners/

It depends on your tank size. If your tank is 20 gallon, you can consider my list below:
Platy
Swordtail
Molly Fish
Cory Catfish
Dwarf Gourami
Neon Tetra
Zebra Danio
Fancy Guppy
Otoconclus
Harlequin Rasbora
