Decided to check Hermes tank for Nitrates just because and Iíve only had him for a week and his ammonia is already down and Nitrates are up

Is it maybe cause heís got a big filter? I just feel like this happened really fast compared to Ares

Did you use anything to seed, like a bit of media from your filter for Ares?

bigger filters can contain more space for bacteria to grow - organic eating, ammonia eating, and nitrite eating bacteria

Betta have a relatively low bio-load. With a lighter bioload the cycle may go quickly. How about nitrites? Did you use gravel, live plants, or other decorations from another tank?
When I go fishing I just throw sharp rocks in the water and wait for the dead fish to float to the top... Kingfisher
Everything happens for a reason. Sometimes that reason is you are stupid and make bad decisions.

I think my fish is adjusting well to the four gallon, He's laying on his side attempting to go to sleep on the bottom of the gravel.

Dear naps, sorry I hated you so much when I was a child... Love me

It could be so many factors, how much water you changed, temperature, pH this time of the year....

But I bet it's due to the knowledge you've gained through experience! You are a better fish keeper now :)
