Fall of the bone Montreal ribs
That should be Fall OFF the bone...doh
If your interested in a different style, tasting pork ribs I thought I'd share this gem that everyone seams to love. I posted a photo a ways back and I believe there was a request or two on the recipe. So, here we go...
You will need:
2 bottles generic regular BBQ sauce (cheapest)
Hot sauce - 4 tablespoons (not Franks or Durkee)
Apple sauce - 100 ml (3.5 oz)
Lemon juice - 1 tablespoon.
Brown sugar - 1 & 1/2 cups (minimum)
Pork back or side ribs - 4 slabs (whole) whatever is on sale.
Wrap defrosted ribs in foil and bake at 225F (110C) for 4 hours. Remove from foil and cut slabs into quarters or fifths.
Combine sauce ingredients in a large pot, stir and bring to a low boil using medium high heat. Reduce heat to point the sauce still bubbles. Be very careful as sauce will stick to skin and severely burn. Allow to cook for at least 30 min. Stir occasionally and when the sauce starts to coat and stay on the spoon (thick coat) it is ready to use. To reach this consistency you may have to add more Brown sugar, 1/8th cup at a time is my recommendation.
Hot sauce is your choice with the exception of Franks or Durkees, they are much to salty. Texas Pete or Grace Hot sauce are inexpensive and great for this recipe. Melinda's XXX is best.
Pre-heat BBQ 5 minutes on High. Reduce heat to medium/high.
Place un-coated ribs on hot BBQ and turn with tongs after 5 min, another 5 minutes on other side. This will degrease and "dry" the outer ribs.
Again using tongs (don't pierce ribs) dip slabs in sauce pot, coating both sides and carefully return ribs to hot grill meaty side down. Don't slide the ribs, that will remove sauce. Cook 5 minutes then turn ribs. Re-coat meaty side using spoon/brush. Close cover and cook another 10 minutes. The sauce will now thicken even more and ribs are now ready to serve. Enjoy!!!
