Actually, I should say that the roots of the Anubias are growing around the log, not the plant itself...

Anubias is a much hardier species and will likely not melt. The roots do grow, but the leaves will take some time. It's a slow growing plant.

I have had my anubias nana for 3 weeks roughly in my tank, if anything the leaves have curled just slightly from the lights and current, but the roots have grown some
    Current tanks:
37G FW - 3 Pearl Gourami, 4 Black Mollies, approximately 20+ Molly Fry, 5 Assassin Snails | 10G Planted FW - 14 Molly Fry, rocks, DW and an Anubias Nana - journal

Now, since I can't seem to get the ammonia level up past 1 ppm, can I just leave the tank uninhabited for some time and let the BB grow? Maybe add half an ml of ammonia each time levels drop down to 0 ppm, just to keep the BB fed? That way the BB can grow and be able to better control the ammonia when the frogs are put into the tank?

well you can just let it set to the ammonia hits zero - then you add half what you did to get it to 1 ppm, if you added 3 ml then you need add 1.5 ml next time

I have noticed that my tank is much cloudier than it initially was, it's nowhere near as clear.
