Welcome! And compliments for trying to do the right thing. Thing is about fishless cycle, it's relatively new to the hobby and many shops don't really promote it. So there's still quite a few experienced fishkeepers out there who started a good running tank with a fish-in.
:-) I started my first tank when I was 12 or so, I think it wasn't until 5, 6 years later that I saw the first artificial plant.
For me the big bonus about real plants is that they constantly change and so the tank always looks a bit different.
However, I did notice that on the American market many tanks are sold with poor or even no lights so perhaps that's why it seems that fewer people in North-america plant their tanks.
As to the proposed stocking, that will be a filled tank with all that and those mollies will pump out a constant stream of little ones. Personally I think I'd skip those.
