Old Food?
I inherited a huge 6.5oz canister of TetraMin Tropical Crisps.

I am very partial to this food because the size and shape of the flakes is less messy and easy to measure out food for the fish.
Question #1 - Is this a quality and recommended food?
Question #2 - A quantity this size is going to last for years. Is this okay? Will the food spoil or go stale and be bad for the fish based on age?

It's a decent brand. The problem with buying a large sized container is food does go stale. Loses it's nutritional value over time. I'm sure it affects the taste as well. You could take some of it and put into a separate ziplock bag or container, and refrigerate it, that will help keep it from going stale. I personally wouldn't use any food from a can that has been opened for a very long time. Think of it like an opened box of cereal, that's been sitting in the cupboard for a year or two.
