I am not sure of the specific rainbow that you have stated, i googled it and nothing came up. i would use a different, cheaper fish as a dither tho.

New Life Spectrum Has some of the best food IMHO, they make a small cichlid pellet that is awesome. not sure if you can find it locally in Ireland but you can find it on the web

sand will be better for your plants and corys

pool filter sand works, but so does play sand from walmart, for $2 you can have substrate just wash it really good

My female guppies pick snail larva of the glass, pick out the adult snails and let your loaches and guppies go to town on the larva!

you can put a skunk loach or a large female guppy in the tank and they can help to keep them under control
