My Anacharis plants are starting to grow these string-like runs off the main stem after 5 days in the water with the roots submerged in sand. I thought I read that these are just new roots growing, but the few places I was reading didn't have pictures to confirm this. My Anacharis are also growing actual leafed runs as well, so I'm assuming these are what I can cut off and plant individually. As for the stringy offshoots, what are they?

I only have 1 5500k t8 bulb, but am using a liquid plant grow formula. I'm installing a CO2 diffuser today as well.

I was going to pick up another bundle of this stuff at the LFS this weekend, but if it sprouts itself this quickly I will just start replanting its own roots. This is one quick growing plant!

yup, they're roots reaching down searching for substrate to dig into. Anacharis is not a root feeder, so it really doesn't matter how you plant it, or if you even plant it at all.

Ok great, that's exactly what I figured. Now does this mean that the plant is healthy and ready to keep growing? Or does this mean the plant is malnourished and searching for more nutrients?

It is normal, just the way the plant grows. You can snip them off or leave them what ever you like better it is just looking to anchor itself.
