Aging Question

So I am trying to breed my two dwarf gourami, mind you this is the first time I am trying to breed them, but all seems to be going well. The male has made a gorgeous bubblenest and the female -although stubborn- seems to be coming around to his advances. The question I have comes into my intention of selling their fry once they are old enough. Regardless of how much research I do though I cannot find for the life of me a recommendation on the age that would be the best to sell them without any risk of health or stress issues coming from it. Does anyone have a good recommendation for this? I only want the best for these future fish of mine and don't want to put any of them in danger when I begin to sell them. I'd love to hear from anyone about this.
