I have a 10 gallon aquarium where there's a massive growth of watersprite. It's growth above and beyond the surface of the water and is taking over the entire right half of the aquarium.

Instead of just clipping it and throwing it away, could I trim it in a way that would allow me to replant it in my 25 gallon?

Yes. If you look through the stems you should see shoots that have roots. Just pinch them off and they can be replanted. As watersprite grows it produces smaller plants that can simply be removed and replanted. Once you get it growing it's one of the easiest plants to propagate.
