I was thinking abount purchasing a 125 gallon tank. What type of filter do you suggest I get? Also what type of heater?

I would suggest using two heaters so that one is woking even if one breaks and a filter that gives you large freedom regarding which filter materia you can use.

The filters I'm used to are hang on the back, would I have to use some sort of combo between canister and hang on the back? None of the filters I have seen are rated for 125 gallons.

I would not recommend a hang on the back filter on that size tank. An external filter that you put under the tank and perhaps a sump might be the best solution.
You should however be able to find filters that are rated for 125 gallons. If not in local LFS so on the net.

Do you have to use bulkheads with cannister filters? Or is it a simple as running the componets from the cannister to inside the aquarium.
