So what is the best route to use to cut them up?
I have two that are getting pretty big.
Can only see one in this picture but have one growing out the top of the tank on the left side.

A sharp pair of scissors. Make sure you leave about 3 -4 leaves per section and it should be fine.

I use a razor blade to avoid any crushing.I have had success with just two leaves per segment but more would be better.

I thought you gently just pulled it apart with your fingers...

Plants with rhizomes need to have the rhizome cut.
With most of them you want to leave three leafs or leaflets per rhizome segment.

Java fern is one rhizome plant that can get so think you'd need to pull it apart to get to the point of cutting the rhizomes.
