This question is primarely focused towards NorthernBoy but I welcome answers from everyone.

Can anyone recommend a good (or several) Marlin recipe.

I like fresh flavors. Try sweating some onions with olive oil and fresh anchovy, garlic, hot chile and herbs. I assume you can get fresh anchovies where you are on the pacific coast. once the onions turn clear and the anchovy disolves add some fresh tomatoes and the juices. cook for like 1.5 to 2 hours on low. add some golden raisons or currents and cook for another hour or so. season with salt and pepper. Grill the fish and spoon over. Hot chile and sweet raison with acidic tomatoes is a great mix. I sometimes add some good red wine. Like a super tuscan. Eat the fish and drink with the same wine.
