I can't seem to find a disease matching these symptoms... at least, nothing that's a dead giveaway.

Fish is a red platy, about 1 or 1.5 inches. symptoms listed in the order I observed them.
1.clamped fins
2.discolouration on side towards rear (whitish/pink, hard to say if it is raised/rough or smooth)
3.weight loss
4.hunger
5.unbalanced swimming (one time dashing for food made her spiral out of control and do a few barrel rolls)

there's no noticeable bend in the spine.

any help would be much appreciated

I would try melafix/pimafix

It looks like a bacterial infection (clamped fins) with maybe some opportunistic fungus (growth). Fish may have been injured during transport if they are new or in a fight or something if you've had them for a while

fight is more likely... one of the male platies is being rough

Agreed with Melafix/Pimafix, I would also add some stress coat in case it is indeed an injury, maybe consider raising the tank temps a bit to around 85 in case it is an infection.
