Have a 5 gallon eclipse hex.

Can be seen after the 20high/ten gallon in this video @ about 1:15 in.

My thoughts are some plants, a couple more fish/crab/shrimp/snails?

Do backgrounds look ok on a hex?

I've never done live plants, and this is my only tank w/o an undergravel.

Suggestions? Cheap ones? lol

There is a fish called White Cloud Mountain minnows. They have a nickname of the poor mans neons. That is because the fry have a florescent red and blue stripes for a month or so. There are some real nice long finned ones now too. They are also a cooler water fish and do not require a heated tank. Average room temp is perfect. They are also small, you could put 5-6 in that tank.
Live plants are easey if they like your water conditions. Do some research after you test your water and work within those perameters.

Well the wife likes color, and I like variety. Would 'petco' crabs do well in there? The 5 hex was one of my uncles tanks, he gave it to my friend which in turn did not take care of it. The crab they had died. I watch my parameters like a hawk, and am religious about 25% water changes.

The minnows sound good - as fry. But I don't plan on breeding anything and like color or clear over opaque and neautral. Crabs? Shrimp? Whatever those insane yellow/pink fish are @ petco? (I think they are hybrids/dyed?)

Possibly glofish?

They are genetically altered zebra danios with jellyfish genes to make them neon pinks/yellows and greens.
