i was wondering if there was a coldwater shrimp becuase i have been pondering getting a 55 gallon

Or you could get the 55 first, then we'll start talking stocking. Otherwise it just sounds like you're trying to manipulate the masses into getting you more stocking for your already diseased tanks.

In any case, supposedly Cherries can stand colder water, but a goldfish mouth can swallow one easily.

Ghost shrimp are another one. Most of the dwarf freshwater shrimp can live in coldwater tanks.

what temp range can they live in could they live with 2 fancy goldfish with no heater fancy goldfish are very slow

If the tanks are room temperature, it'll likely be fine.
