I wanna go guppies, neon tetras and 3 cories in 10 gallons.
I was hoping I could stock the tank this week with 3 cories and 2 guppies. Is that too much of a bioload all at once?

How did you cycle your tank?

You won't need cories yet. Start with just the guppies then move on to the cories, then the neons.
Bottom dwellers are more sensitive to ammonia. I'll also echo Drum's question--how did you or are you cycled? If not, please read and follow the fishless cycle sticky. It is THE way to go and is very easy.

I used fish foods, and introduced gravel from another aquarium and also put in aquatic plants. Temp like 82 and ammonia dropped from 5 to 0 and nitrite was like .75 and it dropped to .2 for some reason it staying at .2 ppm.

You will want to introduce the schools of fish at the same time.
What are your nitrATes? Cycling with fish food is usually a bad idea. Were you also adding ammonia or just letting the food decay? Your measurements don't suggest you are done cycling just yet. You really want to read 0-0-30 (or so) for ammonia, nitrITe, and nitrATe. Then do a large water change and you're set.

Nitrates don't need to be 30, they actually should stay low in the beginning unless some are coming in with the tap. 0-0-5 shows a cycled tank.

82F is about 28 degrees C. Bit too warm for neons in my opinion. Neons tend to do better around 24-26 degrees C. guppies will be fine with that.

Neons will be fine at 82. I keep it warmer because I get better colors, growth, and health.

Plus it keeps ick at bay!
Indeed. I guess I was saying 30 nitrATe based on fishless cycling. I like to make sure everything is stable and consistent.
