I'm looking for a good book with lots of photos on how to identify the various discus varieties out there. Any suggestions?

...and I would recommend “The Atlas of Discus of the World” by Dr. Herbert Oxelrod, Fr. Watten Burgess and Bernd Degen. would be a good start.....Anything by Bernd Degen would be good.

I will second that second link with the books. I actually have the first 3 books in the list and I think a couple of the others, and they are good books for discus information
