Would a 30" tall tank be too much for them? Tank has lots of floating plants to hang out near the top on, but I have read they can have trouble in taller tanks.

I have kept them for years in a 22" deep tank.It only takes them about a second to reach the top to gulp air in any tank.No problem,go for it.

the only thing I ever saw mentioned about depth was "don't put them in a tank that is too deep"
