would one or two fiddlers be ok in a 10gal with a betta?

No experience with crabs, but from what I have read and just my opinion....I wouldn't advise it.

The crab/s may make a meal of the betta....the crabs need some dry land also. I read that fiddler crabs need brackish water for overall/longterm health....could be wrong, I'm not sure!

Nope! Little Embers is right!
There is no way to keep those two together.Even if you could the betta wouldn't have any fins left.The fins also make it easy for the crab to grab hold of the betta.
