what should be my bettas diet?
should i add veggies?

They love bloodworms! I wouldtn't know about veggies and a betta though. Mine also likes daphnia once in a while.

Bettas will accept quite a wide range of foods including prepared foods and small live/frozen foods. Feeding a high quality flake or pellet would be a good option for the main part of the diet. Make sure to include meaty foods such as bloodworms, daphnia, brine shrimp, insect larvae and tubifex worms.

2 of mine will eat anything

But the one upstairs will only eat tetra colour crisp flakes and bloodworm and peas

They all love crushed peas

how do you prepare his peas and how many do you feed?

lol i use frozen peas. peel and squish. the squishing may not be neccessary but it seems to make it easier for the fish to eat.... plus it's fun lol For one betta one pea (edit maybe not even a whole one) would probably be good. It acts as a laxative so this shouldn't be an every day thing.

as above, i use half a pea per fish, and then a couple of extras in the comunity tank for te other fish as my clowns like it

They tend to have peas once a week, usually after a blood wornm day
