How long does it take plants to grow (java ferns and Anubis) to a decent size? I want my tank to eventually look like a jungle lol.

Quick question.

those grow very slowly, it will take 3-6 months, all depends on how much you started with

Also, it's going to depend on the nutrients you provide, lighting, and CO2.

2 40 watt 5000k bulbs in a 55 gallon tank, with the sachem nutrient thing (bottle isn't near me at the moment lol)

That's 1.45 wpg, you're probably not going to have very fast growth, though your plants (java fern and anubias) will be ok with the low light.
