So I am contemplating picking a common red cray up from the pet store as another member to the tank and color contrast to my blue cray at the moments. Would there be any problems keeping the two different crays in the same tank if enough hiding spots were made?

Chances are they would kill each other. They like to hunt more than hide!

That depends on how large your tank is. I would say the minimum for 2 would be 55 gallons (20-30 per cray). Also, if you had a male and a female it would work better.
