Well, I think he's being gentle with the guy. Also, I read the comments below the video, and he says the fish DEMANDS to be touched and held. He also said he adds stuff to the water to help with the slime coat. I can imagine as long as you don't squeeze or rub the fish too hard it should be ok. I thought the same thing as you when I first saw it, so I thought I would read the comments to see if he explained it.

I bet he puts his hand in stress coat before hand or treats the water with stress coat before or after. It's really cool though, I will surely try one day when my goldies get that big.
