I have both an aponogenton and lily bulb in my 2.5g Betta tank.

Will these plants do better under florescent lighting than they will under the incandescent bulbs that came with the kit?

I think the spectrum that comes off the light is more important than the type of light fixture you have on it.

For a 2.5g tank I wouldn't worry too much about light. The light in the room and light from the fixture in it should be fine.

incandescent bulbs do very little for plants, replace it with a screw in florescent in the 6500-10,000 k range

I agree with Algenco, a florescent light will probably be better, but if the tank is near any kind of decent natural light source, like a window you should be fine I would think. Apons and Lily's don't need a huge amount of light and they will send pads right to the top to get as close to the light as they can anyway.
