I have been told Snails do not change the bioload is that true? So I technicaly could have xx Gallon tank and my choice of xx number of Snails.

It's probably a bit far to say that they have no impact, but the impact wouldn't be as important as for an equivalent amount of fish.

Snails have a much lower metabolism than fish do and with lower metabolism, less production of ammonia and other harmful by products.

Basically, a few snails won't change anything, but if they get out of hand or you're already near your max stocking levels, it could be problematic.
