Ok....The tank has been up and running and doing great, the ammonia levels have spiked on and off but I have been able to get them to go back down. What is the best chemical/method to keep your ammonia down for good?

Your ammonia levels will keep spiking until the bacteria has grown to reduce those levels. Do a quick read of Tips for Newbies in the Announcement thread. Maybe some of your questions can be answered there.

I would try to stay away from chemicals if you can. I just finished cycling my tank. I had to do 50% water changes every day for 2 weeks straight becuase my ammonia was so high and i had fish in the tank. But its all done now and it was worth it.
