I've realised that I will be keeping all soft corals, poylps, and shrooms in my 20g nano.

So, that being true, should I be dosing with iodine? If so, how often and how much? I don't want to dose too frequently and have it crash when I go away.

Not really a necessary thing at all. If you keep up with your water changes like you should, you won't be running into any problems with your iodine levels. If you do decide to dose with it though simply follow the instructions on the bottle.

I will also have a skunk cleaner shrimp....how important is iodine to them? I know they use it for growing new shells or something. Can't remember exactly.

The iodine contained in your salt mix 'should' contain the iodine required (providing that regular water changes are performed as ILuvMyGoldBarb stated).

However, individual tanks have different iodine consumption rates and different brands of salt mixes (or even different batches of the same brand of salt mix) may contain varying levels of iodine. I recommend first testing your tank's water for iodine to determine if iodine dosing is actually required.

Agreed. One factor that may require you to add Iodine is tank size. The iodine consumption rate of the inverts in the tank will not change and as such the iodine in a small system will be used up much quicker. Because of that you may need to dose it, however if you are doing weekly water changes of a sufficient amount you may not. It's a case of test and see.

you shouldnt need iodine, faithfully do water changes weekly and your iodine should be alright
