kind of cichlid that can be kept in a 55g aquarium with these types of fish: dwarf gourami, or kissing gourami, or mollies, or plecos, or blackskirt tetras, or male betta, or angelfish.
Yes I know that an angelfish is a cichlid but I was thinking more along the lines of a dwarf cichlid or maybe an electric yellow or blue cichlid. My fiancee would really like to have the brilliant colors of these types of fish.

Basically all apistos would be fine in that set up, provided there are enough hiding places.

How many Angelfish do you have in there? They can get pretty feisty sometimes. It's best to choose a larger apistogramma, like macmasteri. Or you could look into Rams.

I had two but one died, not really sure why. I purchased them at the same time and they were approx. the same size but I started noticing that the one that died was not growing or at least not nearly as fast as the other one. So anyways, the answer is one for now, but I think I will be getting another so I can have pair. I'm fairly certain the one I have now is female.

Angels, like most cichlids aside from African Rift Lake species, are best kept as a pair. To establish a pair, start w/5-6 then return the extras to the lfs after you have an established pair. Simply tossing another angel or two into the tank at random isn't likely to work out.
Honduran red points would likely be a suitable mix with the rest you listed. They're quite easygoing for cichlids and do have some nice blue and red color, though not as bright as Africans.
Africans wouldn't be a good mix with your current stock, it would be much better to set up another tank, 75 gallons is a good size, specifically for them.
Kribensis or Rams are another possibility, generally considered as dwarf species.

yep, angels will establish a pair, and with any more than 2, youre gonna have alot of fighting
