Well I now have
0 Ammonia
1 to maybe even 2 Nitrite
10 Nitrate.

So I am seeing a nitrIte spike in the 10G with the one fish......I was concerned at .25 so now I am really concerned with the 1-2 ppm reading.
Should I let it go...or should I change out some water?
How long will it take the Nitrites to go down from this point?

In this situation i usually Wc until its back down to 1ppm, you should see 0 0 and some nitrate in about a week or so. What kind of fish is it again?

Edit: Oh a gourami, duh. lol Yea if you wanna be safe you can take em down to .5 but the more water you change the longer it will take

It is a gourami. unfortunatly I had to scoop him into the tank before it was fully cycled. Everything was on the low end for quite a while...
,25 of Amm. and Nitrites and 5 of nitrates now I have 0 readable ammonia and 1 or maybe 2 of the Nitrites and about 10 Nitrates. Soooo I am a bit concerned he might not make the cycle.
If I suck out 50% of the water without sucking out any of the substrate or anything since the beneficial bacteria isn't in the water will that set the cycle back to much?

ETA: Also since I am seeing Nitrates, is that because of having plants and having seeded the tank a few weeks ago with stuff from my other tank? Or should I not see Nitrates yet?

No thats totally normal. You are in the "home stretches" of the cycling to put it plainly. Just watch ur NI levels, and wc them down to safe levels when you need to, as long as you dont disturb anything, small frequent water changes should do almost nothing as far as slowing it down. Ur fish should be fine as long as the NI is at or below 1.0. If hes senitive or something you will see his behavior change and you will know to do more water changes. I recently cycled 2 10gallons and i ended up with this exact situation after using bio spira, in a week or so things should be going back down, and ur fish should be fine. The fish in the ten gallons didnt show any signs of stress or uncomfort even when my NI spiked to 2 on some occasions. Red eyed tetras, and zebra danios. A snail too and he didnt seem to be in his shell any more often either.
