My ammonia is zero but I am now in a nitrite spike...it is between 1.6 and 3.3 somewhere. Can you do multiple small water changes in the same day? When I do a water change I only change out about 5 gallons of the 30. Can I do multiple changes of this magnitude a day without damaging the biosphere? I just want the fish to be in a comfort zone without being too stressed

I have done 2-50% in a day, if you haven't messed with the ph of the tank (same as tap) there shouldn't be a problem.
I have done WC daily at 50% for weeks in a heavily overstocked tank

Just do a larger water change.... say, 10gal (33%)...or 15gal (50%). That will cut down the nitrite in half. As long as you are careful with matching up the temp and chemistry, it really shouldn't matter. But, probably not a good idea to do constantly... The more you do it, the more room for error.

you could also use Seachem "Prime" dechlor at up to 5 time normal rate. It will help detoxify the nitrites.

You can do huge water changes 2 times a day or so. Just watch as the kH is likely to fall leaving your tank susceptible to pH swings... If you have like pH though as tap you should be fine.....
