Corydoras will, but they will not clean up rotting food and fish poo, that is a snails job. Corydoras will however, clean up freshly fallen food, and they do a great job of foraging throughout the entire tank, so there will not be that much food to go rotten. But there are no fish I know of that eat rotten food or fish poo.
Cories do a great job of cleaning up any and all fallen food in my tanks. No matter how much you feed them they are always out and about foraging and frolicking, as long as they have some hiding places to duck back to when scared, and they have a proper sized school, they are very bold and active.

You want a fish that will eat anything? Pakistani/ YoYo Loaches, which will stay above the gravel, Kuhli loaches will eat the food IN the gravel. Handy or what!?
