I can't find any pieces of driftwood big enough for what I want so I'm going to look for myself. What wood is NOT suitable for driftwood? I'm in Australia and I'm guessing that Eucalyptus would be out. What else should be avoided?

Cyprus is perfectly fine for aquarium drift wood. You want to stay away from freshly fallen or cut varieties of wood that release pitch.
