Is the white patch on their back a sign of molting or a problem? I only see a couple at most in a tank with may of these shrimp.

There are several variations in shrimp. You'll occasionally see cherry shrimp with white dots all over them. Long as your shrimp are acting normal, I wouldn't worry about color variations.

The white 'saddle' on the back of a cherry shrimp shows it is a female and that she is ready to spawn ... all cherry females get it

i think that might be it, it's a big patch looking like the old skin starting to seperate, but this would make some sense too.

when they molt it all comes off at once, if not they have problems. I think you are seeing the "Saddle", new eggs, when they molt the eggs are move to the swimeretes
