I let Brazilian Pennywort float in my tank and mine doesn't bother it.

From easiest to most difficult to grow: Vesicularia dubyana, Echinodorus tennelus, Marsiliea quadrifolia, Glossostigma elatinodes.
Common names: Java Moss, Dwarf Chain Sword Plant, Cloverleaf and Pearl Grass/Baby Tears.

I think floating plants are fine, they move so they oscar can't hurt them to bad.

Some floating plants would be fine and the oscar wouldn't bother it much.
Also, like Dave said, java moss is a very easy to take care of low growing plant that the oscar shouldn't bother. I have some in my tank and it is doing great. Even so with a fish like an oscar no plant is 100% gaurenteed not to be munched on. Some just less than others.

it isn't so much that the oscar might eat it, but the fact that they will attack, rearrange anything in the tank that doesn't suit them at that particular moment.

Yeah, what you are supposed to do if you want plants so they dont get eaten/ rearranged is use floating plants, not ground/ low growing plants.
