i want to get a snowflake moray eel. what should i feed one?

They are saltwater fish. Are you wanting to do a saltwater tank?
Snowflake eels is a tricky subject because there are two types referred to as Snowflake eels, the Snowflake Moray Eel (echidna nebulosa) as you mentioned. These are salt water fish and require a salt water set up.
There is also the Snowflake eel (gymnothorax tile) also known as the Freshwater Moray eel. These are freshwater fish who do best in brackish (partly salt water) tanks and once they are older, do best in full salt water tanks. I had one a while back, but he jumped out of the tank and died. I fed him feeder fish because he wouldn't eat prepared foods.
Just make sure you know which one you interested in getting before you buy to make sure you have the right set up.

From my experience even the 'freshwater' ones do much better in brackish from the beginning, at least at the size most are when available in pet shops.

You can feed Morays by putting a small piece of shrimp or squid on a feeding stick. Hand feeding is not reccomended. Good luck if you get Moray. I have heard that they are good marine begginners' fish, although they easily outgrow most aquariums.
