is that normal? I tried to get a picture but he is in his cave

It's completely normal. Most invertebrates consume at least part of their molts as a source of calcium.

As Dave-Id stated, it is completely normal. Most likely the foods you have been providing have been low in calcium, so the cray is trying to replinish it's stock by eating the old exoskeleton.
